Home Cured Bacon

I'm making my own home cured bacon.  It is so easy and they say will change your buying life.  I'll tell you how it goes but here is the recipe so you can give it a go.

1/2 Pork Belly
1 Kg Fine Salt
200g Brown Sugar
25g White Pepper pounded in a mortar and pestle
A handful of Juniper Berries
6 Bay Leaves crushed

Mix salt, sugar, pepper, berries  and bay leaves together then lightly rub mixture into pork belly. Cover every inch. Let sit in an air tight container in the frig. for a day.  Drain liquid and rub again for 5 days.
Mmm bacon!
